Gatekeeper's BBQ Sauce


Creating My Favorite BBQ Sauces

Here are some personal facts about BBQ sauce.
1.      I do not have one favorite sauce you can purchase
2.      I have preferences, but there are few I would say that I definitely do not care for.
3.      Most sauces have aspects that are good and desirable to me.
4.      I pretty much eliminate all sauces that are “just another product” of the many made by a large food conglomerate (Kraft, Heinz, Del Monte, etc)
5.      I use sauces that are made by BBQ sauce companies ( Famous Dave’s, Sweet Baby Rays, KC Masterpiece, Haywards, KC’s Gates, etc.)

In order to produce a sauce I really like, I have to combine a few ingredients.  It is easy, and there is no way to mess it up.  I find it much easier, and better, to use already made sauces than to make my own.

My favorite recipe:
·        For approximately 16oz of sauce
·        8 ounces of Gates original sauce from Kansas City. This is my base sauce, because it is not a sweet sauce.  It has a good amount of pepper in it, but is not real spicey hot. You may have to purchase it online (tip..with Amazon Prime, it is cheaper than having Gates ship it to you)  

8 ounces of one of the following:
·        Sweet Baby Rays or Famous Daves (original Rich and Sassy)
  
 I add to this about 2 TBLS of a good apple cider vinegar, like Bragg.  Here is one variation I like for a bit of “sweet” in the sauce:  I add about 2 TBLS of a good cherry or black cherry syrup, such as DaVinci or Torani syrups. Try a very little at a time to get what you prefer.  You can also add a few drops of a really not (habanero, ghost pepper, Carolina reaper, etc) sauce for a Sweet/Heat.  CAUTION:  use these hot sauces by the drop, not the ounce.  They are EXTREMELY hot and a drop or two will probably do it.

EXTRA:  For traditional Buffalo Wings (and who doesn't like good wings) mix your  BBQ sauce with about an equal amount of Frank's Red Hot Original cayenne pepper sauce. This will give you a more true Buffalo Wing taste.
