Ingredients
1 pound of pork sausage (optional)
6-7 eggs depending on size
½ cup sour cream
1/8 cup heavy cream (half &
half or milk)
Coarse sea salt and fresh ground
pepper (preference…1 tsp each)
3 full green onions medium chopped
½ red bell pepper
½ green, orange, or yellow bell
pepper (orange is my pick)
1-2 cloves of finely chopped garlic
(fresh is better than granulated)
1 cup fresh spinach chopped
2 medium Roma tomatoes chopped
1 cup grated cheese. Cheddar or grated blend of your choice
Instructions
Preheat oven to 350. Spray 9X9 baking dish with non-stick cooking
spray.
Combine eggs, sour cream,
cream/milk, cheese, salt and pepper in a large mixing bowl and whisk until
mixture is combined.
If you are including sausage, brown
it in a sauté pan. Remove sausage and sauté onions, bell peppers, garlic,
tomatoes and spinach in the same pan for about 3-5 minutes. Add sausage back in and gently stir. If you
want a vegetarian dish, just eliminate the sausage.
Add the sautéed ingredients into
the egg mixture. Stir briefly until well mixed.
Pour mixture into 9X9, greased, pan
and cook for 35-50 minutes. Cook until
the sides have a slightly brown crust and the middle is firm on top. Check the center with a toothpick…if it comes
out clean, it’s done. Remove from oven
and let set for 5 minutes before cutting and serving.
NOTE: This recipe can
easily be altered to include or eliminate other ingredients, fresh herbs and
spices. It can be made with meat or as a vegetarian dish. It can also be doubled for a larger crowd and
prepared in a 9X13 baking pan. This size will easily serve 4-6 people.
